Bill's Deluxe Spaghetti


1 cup of chopped mushrooms (chanterelles, Caesar's, Agricus, or whatever's handy)
1 8-oz. can of stewed tomatoes
1 4-oz. can of tomato sauce
1/2 cup of chopped black olives
1/2 cup of chopped purple onion
1 large bell pepper,chopped or sliced
1 package of toasted tofu crumbles
high-grade olive oil
1 package of enriched wheat thin spaghetti


Pour just enough olive oil into a frying pan to cover the bottom of the pan.
Add mushrooms and onions; sauté until onions are translucent.
Add peppers and olives; continue sautéing until ingredients begin to cook through.
Add tofu crumbles, and mix well with other ingredients [tofu is already cooked].
Add tomatoes and tomato sauce; stir until heated evenly.
Spoon over cooked spaghetti noodles and top with grated parmesan cheese.
